RECIPE - One Point Hearty Chili

2/3 cup (½ package) of seasoned ground tofu (or you could use 6 ounces of lean ground turkey)

1/2 medium onion, diced
1 (28-oz) can diced tomatoes
1 medium zucchini, diced
1 medium yellow squash, diced
1 cup black beans
1 (15-oz) can vegetable broth
2 celery stalks, diced
1 red bell pepper, diced
2 tbsp chili powder
1 tsp cumin
1 tbsp paprika
1 tbsp liquid smoke
Salt to taste

Pop everything in a slow cooker and cook it on low for 8 hours or high for 4 hours. 1 cup is equal to 1 point/exchange (approx 60 calories)
